Zampone: a Convivial Spirit to Share
Zampone is prepared using high-quality meat mixed with pork rind, then flavored with salt, whole or ground peppercorns, wine, natural aromas, spices and herbs, following an ancient recipe.
The mixture is carefully stuffed into a natural casing made from the skin of the pig’s front trotter.
It is a rich, flavorful and convivial dish, a testament to the cuisine of special occasions. Its origins date back to the 16th century, when the people of Modena invented a method for preserving uneaten pork meat, then cooking it later.
How zampone is made
The production method for zampone is similar to that of cotechino. In the case of zampone, the mixture of ground meat and spices is stuffed into a casing made from the skin of the pig’s foreleg, specially treated.
You can find both zampone to cook and pre-cooked one on the market. The latter type is highly appreciated, because it shortens preparation time.
