Pancetta: the Tasty Cured Meat that Seduces the Palate

Slices reveal a pinkish-white color, with more intense red tones in leaner cuts. Its fine, inviting aroma varies with spices used, such as black pepper and cloves. In the central and southern regions of Italy, it is common to find variants flavored with chili pepper, garlic and fennel seeds, which give it a more decisive character.

On the palate, it is soft and melts in the mouth, offering a sweet-savory flavor balance.

How pancetta is made

Production begins with careful selection of raw materials. One key step is salting: the salt, carefully selected in the right grain, is distributed so as to penetrate well into the meat, preparing it for the subsequent drying phase and helping to enhance its flavor and consistency.

Spices such as cracked black pepper, cloves, nutmeg, cinnamon and juniper berries are added to deepen the flavor.

The pancetta then rests in cold storage for 8 to 15 days, depending on the type.

After resting, then it is washed, dried and briefly aged, to develop its perfect balance of aroma, texture and flavor.
