Cotechino: the Full Taste of Tradition
Cotechino is made from lean pork, finely ground and seasoned with salt, pepper, spices and natural aromas. Cylindrical in shape, it weighs between 500 g and 1 kg.
Once cooked and removed from its casing, it presents a beautiful pink slice that releases an intense aroma. For optimal cutting, it’s best to let it cool for a few minutes before slicing.
In addition to its rich and satisfying flavor, cotechino also offers a good nutritional profile: it provides high-quality proteins and balanced fats.
In recent years, even internationally renowned chefs have been able to showcase it with original recipes and creative combinations.
How cotechino is made
Cotechino is a mixture of lean ground meat seasoned with various herbs. It may also contain wine, natural aromas and spices, according to the traditional recipe. The resulting mixture is stuffed into a natural or artificial casing.
This cured meat is available in a fresh version (which requires about 2 hours of cooking) and a pre-cooked version, usually ready in 20-30 minutes.
Traditionally, cotechino is eaten during the winter. In particular, it is one of the dishes used to celebrate the Christmas holidays. In recent years, however, it has also become popular for other occasions.
