Founded in 1985, the Istituto Valorizzazione Salumi Italiani (IVSI) is actively involved in promoting the entire Italian cured meats sector. It brings together meat processing and preservation companies, trade associations, protection consortia and other collective organizations.
Today, IVSI is a reference point for cultural, nutritional and production-related information about Italian cured meats, both in Italy and abroad. It conducts ongoing institutional and informative communication activities, promoting values tied to tradition, quality and territorial identity.
Nationally, IVSI operates on multiple fronts: media relations, consumer campaigns, publishing initiatives, market research and technical-nutritional analysis. Internationally, its activities have expanded since the 1990s through promotional programs in numerous countries.
In 2018, IVSI launched the IVSI Manifesto, a charter of values outlining the principles shared by member companies: history and tradition, information and culture, quality and sustainability, territorial connection, Italian lifestyle, teamwork and future-oriented vision. This document reflects the sector’s commitment to transparency, innovation and social responsibility, promoting local gastronomic heritage as a symbol of excellence, authenticity and lifestyle.
